Kubota is dubbed as the quintessential representative of Niigata sake. The company (Asahi Shuzo) is the largest in Niigata, which is the third largest sake-producing region in Japan. The kura has long been innovative and was one of the first breweries to switch from wooden tanks to ceramic lined steel tanks in the late 1920s, way ahead of its counterparts in Japan. This, without doubt, has helped create the light, dry yet refined style that is Kubota.
